A recipe by Ramón Garriga, better known as Gluten Morgen. To complete the dish, he prepared a stuffed barbecue pulled pork with super tempting sweet-and-sour pickles.
Ingredients:
- 1 boiled and crushed orange sweet potato (110 grams)
- 3 eggs
- 450 g of flour 000
- 15 g of dry yeast
- 8 g of salt
- 200 g of water
- 30 g of oil
- Sesame seeds.
Preparation:
- Boil and crush the sweet potato without any added.
- Mix the flour, yeast, salt, 110 grams of sweet potato and eggs.
- Take to the kneading mashine and add the water. When it integrates, add the oil.
- After 20 minutes move to a bowl and leave to ferment covered with a film for an hour until it doubles in size.
- Take it out of the mold. Divide into buns. Bring to a baking dish (you can cook in hamburger bun molds).
- Brush with a mixture of egg and milk and place the sesame seeds.
- Let stand for another hour.
