This pumpkin bread without flour is ideal for a fresh and light sandwich.
Ingredients:
- egg whites
- 2 whole eggs
- 4 tablespoons pumpkin puree
- 4 tablespoons grated coconut (or any flour)
- 1 tablespoon of baking powder
- 1 teaspoon of curcuma (optional)
- Salt and pepper to taste
- Mix of seeds to put on it
Preparation :
- Mix all the ingredients in a bowl and incorporate with a spatula and then process with a minipimer or blender.
- Pour into a square silicone mold (if not silicone, grease previously).
- Cover with seed mix.
- Bake in a moderate oven for 25 minutes, until golden brown.
- Let cool, cut in half, prepare the sandwich.
