Monegasque recipes are often a delicious representation of the Mediterranean diet. Monegasque cuisine is in fact a curious mixture of Italian, Provencal and Niçoise influences.

Tomates à la Monegasque are a fresh and delicious dish consisting of tomatoes filled with a cream of tuna, eggs and mayonnaise, usually served together with a refreshing green salad.

Monegasque tomatoes are a yummy summer dish, which can be served either as a colourful appetizers or as a side. 

Here is our suggested recipe for Monegasque tomatoes.

Ingredients (for 4 portions)

4 big round tomatoes

100g tuna

2 boiled eggs

1 tsp mustard

chives

mayonnaise

some lettuce leaves

salt and black pepper

Method

Cut out the top of the tomatoes and take out the seeds and the pulp.

Put salt inside the tomato cups and spread it around, so that the tomatoes will lose their water.

Mix the tomato pulp with the tuna, the grated eggs and the grounded chives. Add mayonnaise and mustard to the mixture. 

Fill the tomato cups with the mixture and add ground black pepper to taste.

Let the tomatoes rest for few minutes in the fridge.

Serve the Monegasque tomatoes with their top on, on a dish with lettuce leaves.

As an alternative, cook some rice and add it to the tuna and egg fill, for a more consistent main dish.
